The winery's proud white wine, produced annually for 40 years

"Ashicoco" is a standard white wine from Coco Farm Winery that has been produced since 1984. Its name is derived from "Ashikaga," where the winery is located, and "Cocoromi Gakuen," its parent organization.
It is made by fermenting Koshu grapes, an indigenous Japanese variety from Yamanashi Prefecture, with wild yeast, blending in Chardonnay and Bacchus, and slowly fermenting at low temperatures.
Its fresh aroma and pleasant mouthfeel are sure to satisfy both beginners and wine connoisseurs alike.

Pioneer of wild yeast fermented wines in Japan
In general winemaking, cultured yeast, which is cultured and dried natural yeast, is added to grape juice to promote fermentation. However, at Coco Farm Winery, no additives are used, and instead, wild yeast naturally adhering to the grape skins is utilized. The yeast gradually becomes active, and the grapes are patiently allowed to transform into wine.

While this method of overseeing fermentation takes time, it results in high-quality wines described as having "terroir-driven flavors" and "the true taste of the grapes."
Winemaking with wild yeast has gained attention with the popularity of natural wines, and Coco Farm Winery is regarded as a pioneer in wild yeast winemaking.
Japanese wine pairs perfectly with Japanese food
Based on fruity aromas of apple, pear, and apricot, it expands with savory and spicy notes of hay and nuts.

Its umami enhances appetite, making it a recommended aperitif. This Japanese white wine pairs well with Japanese flavors like soy sauce and miso. Grilled clams with a splash of soy sauce are an exquisite match. Enjoy it well chilled, one sip at a time.
Winemaking that only "Coco" can achieve
Coco Farm Winery began in 1958 when Mr. Noboru Kawata, a teacher of a special education class (now a support class), and his middle school students cleared a steeply sloping vineyard.

This steep slope became a place for students with intellectual disabilities to train their minds and bodies.
In 1969, "Cocoromi Gakuen," a facility for intellectually disabled individuals who had completed compulsory education, was established.
Then, in 1980, Coco Farm Winery was founded on the same site.

Based on the belief that "we don't want wines bought out of sympathy, but ones recognized for their quality," they produce authentic, world-class wines.
In July 2000, their name became widely known when their sparkling wine "1996NOVO" was selected for the dinner party at Shuri Castle during the Kyushu-Okinawa Summit.

As a result of their beliefs becoming a reality, the winery's management stabilized, which in turn contributed to the pride of the students themselves.
Today, Coco Farm Winery continues to meticulously craft wines, one by one.
