A rich sparkling wine combining three types of grapes

This authentic sparkling wine is a blend[*] of three grape varieties: Chardonnay from Takahata Town, Yamagata Prefecture, as the main component, Riesling Forte, and Pinot Blanc.

It has a sharp, crisp, and dry taste. While light and easy to drink, it leaves a profound finish.

With one sip, refreshing aromas reminiscent of grapefruit and lemongrass waft through the nose, accompanied by a subtle hint of toast.

With the rich fruitiness of Chardonnay as the base, Riesling Forte adds sharpness and lightness, while the smooth Pinot Blanc brings a clean finish to the whole, resulting in an easy-to-drink, well-balanced wine.

 

The power of secondary fermentation in the bottle and inherited techniques

The smooth mouthfeel of "Minori" is created using the traditional "secondary fermentation in the bottle" method.

This method involves bottling wine after primary fermentation and carefully developing bubbles over time. Over 10 months, this process brings forth fine, long-lasting bubbles and a rich aroma.

The name "Minori" (穣) expresses a wish for a bountiful year. In 2024, it garnered prestigious awards in domestic competitions.

The charm of Takahata Town, Yamagata Prefecture, Japan's wine belt

Takahata Town in Yamagata Prefecture is a region where rice cultivation, grapes, and Western pears are actively produced. Among these, Chardonnay, used for wine, boasts one of the highest shipment volumes in Japan.

Takahata Town is actually located in what is known as the "wine belt,"[*] a region suitable for viticulture, just like famous wine-producing areas in countries such as France, Italy, and Spain.

The sweetness and acidity that only grapes grown in this blessed land can provide create a rich taste and deep aroma.

[*]The "wine belt" refers to regions suitable for grape cultivation and winemaking. Takahata Town meets many of the criteria, including an annual average temperature of 10-20°C, located between 30-50°N latitude and 20-40°S latitude, 1000-1500 hours of sunshine from grape budding to harvest, and an annual rainfall of 500-900mm.

 

Takahata Town, a pioneer in organic farming, creates wine for the next 100 years

Since the early 1970s, Takahata Town has focused on "sustainable production and consumption" and "biodiversity protection," engaging in agriculture that considers both the environment and health.

In 1973, when pesticides and chemical fertilizers were still prevalent, young local farmers concerned about environmental destruction and health damage established the "Takahata Town Organic Agriculture Research Group" and began practicing organic farming.

This initiative continues today, with the town setting its own stricter pest control standards than national or prefectural guidelines, striving to reduce environmental impact.

Wine made from grapes cultivated with a vision for the next 100 years is also recommended as a gift or souvenir for parties.
