Oysters and beer.
While seemingly an unexpected combination, oyster beer is a historical flavor that once captivated Irish gourmands.

This oyster stout[*1] is brewed using whole oysters, shells and all, from Hirota Bay in Sanriku, Iwate.
The calcium carbonate in the shells mellows the acidity of the wort[*2] and gently regulates fermentation, resulting in a smooth, mellow flavor.
The umami of the oysters adds richness, creating a deep yet clean finish.
[*1]Stout is a type of dark beer made using roasted malt. It is characterized by its savory aroma, gentle sweetness, and creamy mouthfeel.
[*2]Wort is the liquid obtained by boiling barley during the beer brewing process to convert starch into sugar. This is then fermented to produce beer.
A Sanriku stout recognized worldwide
Sanriku's Hirota Bay is a renowned oyster producing region, where water rich in minerals flows in from abundant forests.

Oysters raised in this area are known for their plump, large meat and rich, creamy flavor.
Due to the two to three years it takes for them to reach maturity, their production is limited, and their rarity and high quality have earned them a strong reputation in the market.

This oyster stout was created in 2003 when a brewery, which had long wanted to "create a beer typical of Tohoku," partnered with a local oyster farming company in Rikuzentakata.
Its flavor, which captures the rich umami of local oysters, has received high praise both domestically and internationally.
