Its rich aroma and deep flavor are thanks to the aged sake, matured over a long period of three years or more.

Aged kimoto-style[*] junmai sake is rich in sweet components derived from rice and umami components like amino acids.

[*]Kimoto-zukuri, a traditional sake brewing method, is characterized by cultivating natural yeast using "moromi" (a mash of rice and water). During this process, lactic acid bacteria produce lactic acid, which gives sake a deep flavor and rich aroma. It is said that this method, which requires delicate techniques and effort, creates a truly unique flavor.

This product generously uses high-quality "Nankou plums" meticulously cultivated in "Kishu," Japan's best plum-producing region.
