The concentrated aroma and sweetness unique to Delaware

When it comes to grapes used in wine, Chardonnay and Merlot are well-known.

Many people may find it difficult to imagine the taste of wine made from Delaware grapes, which are typically eaten fresh.

The most distinctive feature of Delaware wine is its elegant aroma.

Its fresh, light acidity and sweetness make for a delightful taste that will have you eager for the next sip.

 

Carefully selected grapes, with a dedicated process

We employ "Cryoextraction (frozen pressing method)" where Delaware grapes grown in the winery's hometown of Takahata Town, Yamagata Prefecture, are frozen immediately after harvest, and then slowly thawed and pressed.

The remaining water in the grapes stays frozen, and only the high-sugar juice that melts first is collected. It's astonishing that the amount of juice obtained from frozen fruit is about half that of regular wine.

The luxuriously collected juice is slowly fermented at low temperatures, resulting in a wine with exceptional sweetness.

The aroma, reminiscent of apricot, ripe white peach, dried fruit, and honey, is approachable even for wine beginners, and a satisfying glass for wine lovers.

 

A supporting role that adds flair to your table

It pairs wonderfully with fruit marinades and light desserts. When paired with a sweet dish, the delicate lingering finish is further enhanced.

 

Japan's best Delaware, grown in fertile soil

Delaware grapes are characterized by their gentle acidity and elegant sweetness. Takahata Town in Yamagata Prefecture, where Takahata Winery is located, is a thriving fruit-growing region, boasting the largest shipment volume of Delaware grapes in Japan.
